Potential of Cymbopogon citratus in Food Preservative

Abstract

The food industry is now developing food products along consumer's preference for safe food with an extended shelf life. Synthetic preservatives are considered to have an adverse health effect upon prolonged consumption, hence the paradigm shift in food production. Lemongrass (Cymbopogon citratus) is valued as a flavoring agent, antioxidant, antibacterial, and fragrance. This review provides insight on value of lemongrass extracts and its essential oil in natural food preservation.
